Caviar with Alexander Petrossian – Q&A 25 | Kirby Allison

Hi I’m Kirby Allison And we love to help the well-dressed
take care of their Wardrobes. Today I’m here With Alex Petrossian And my friends putrescent caviar And we’re going to have a little bit
of an impromptu Q and A about caviar. This is going to dovetail At the end of our caviar series that You guys have all been watching on
our YouTube channel. And so we’re just going to go into
some of the Common questions that we’ve seen
people Asking And that really have an attitude to
sit down And speak to those questions in
greater Detail. So Alex thank You so much for being here With me. We had an opportunity to Go down And actually fill up the video And the because the room And the caviar right there was
amazing. You know actually grading caviar Showing the process where you were
helping Me all my believe. Yes. Yes I know. Well it’s it’s tough
work to go in There and so on. It’s it’s definitely enjoyable For sure work for sure. And a we’re in the middle of a Huge refrigerator Room. And did you know I wish I had one of
those my Office back in Texas.

You know it’s dangerous to have that In your office in Texas. You’ll spend more time There than your actual office. Yeah. So we have a few questions here And we’ll just get started. You know the first question we’ve
seen Asked quite frequently is You know what do you eat Or drink caviar with. So I would drink Champagne or vodka With your Shrimping I’ll do what can really Cleanse your palate within each Bite. And it’s it’s really enjoyable With the flavor of the caviar Differently if you like stronger Alcohol. I would definitely go for The cold Chris But go And if you’re more into bubbles And you super what about like a Vintage or a non vintage champagne Is there any difference there. Because with the vintage champagne
you can Really have some you know some yeast Flavors and some you know a totally Different flavor profile than A nice crisp clean Non vintage champagne. Personally I’m a big fan of

Vintage champagne And that really truly believe that With Kev you know he works very
well. I think the yeasty accent Or the new Woody part. I’m pleased they will do To you this of the caviar And goes very well together. Do you drink your champagne. You mentioned champagne out of a
champagne flute Or out of my wine. My personal preference is the wine
glass But you know these different school
different People. It’s I really Believe that the enjoying Anything. Same thing in Particular is the way you like to
enjoy It. You know a few enjoy your
champagne Rooked life you Enjoy your thing the way you want. But it’s true. Do wine white wine Glass works very well. So is a Bruce champagne more
traditional With Kev. Oh yes for sure. OK. So you wouldn’t drink It with like a rosé. Well I mean you could for a caviar That’s on the stronger side you
could But definitely not With a bottlings give your Do the Rosie is going to bring too
much Into it. What about any type of like dry
white wine.

You have to know your white wine Fairly well to try To really match because you need a
white Wine that’s super dry. I myself find A white wine that works very well With caviar. I mean they all work fine But it doesn’t mean that’s that Champagne. It doesn’t transcend Experience. OK. OK so our second question is if I’m serving caviar When Or how do I serve it as it served
alone As it served with the meal. When the meal does it fall it kind Of depends on your mood. So there’s a couple of ways To enjoy caviar. First one is to enjoy it straight Out of the 10 With your loved one And in this case you need between 30 to 50 grand per person. You want enough give caviar two days Enough but not too much so It doesn’t overpower to the rest of
the meal. The second way you could enjoy your
Caviar Would be to enjoy it as A cocktail with a little print fresh Little breeze on the Start of the evening.

In this case you need between Three to five grams per person. And if you want to And the third way to serve your
Caviar would be to Serve it with a dish. So top fish With a little bit of Scevola Or a beautiful Big potato With fresh in your Know. It really depends on on your mood And if you use it into a recipe You would need five seven Grams per person. What about. So let’s go to you know
kind Of just enjoying it kind of. And by itself I mean you were
sharing With me earlier that you know the
majority of Your customers are probably just You know enjoying caviar Alone. Can really stand kind of
almost by Itself. I mean Mustafa Do do do do a recurring Client that orders for us From us every Every week let’s say. I’m really looking for A standalone caviar Or something they can do The whole evening on. You know that that’s That you just need a little sort

Of fresh to kind of make it a meal. And it’s very enjoyable If you like this type Of meal it’s a Very enjoyable experience To really open just enough caviar And sharing with your loved one And kind of how the evening goes
around It’s very Meaning. What about you know How much you know if someone was Just sharing a 30 to 50 grams Is what you’re saying. I mean you know it always depends on On your personal thing. I mean if I’m alone My wife and my kids when they win
the Way for the debate And I’m doing that at home I think I would pop open the 125 A little larger 10 then The remaining of the team That I don’t want to eat Or keep on the side For the next morning. And I would do like a blini. And Kev your With a breakfast it’s absolutely Amazing. And would go for a larger tent
because You don’t want to be At the end of the 50 grand that. I wish I had another another.

A little bit on it so I always go Larger when them when I’m alone. Kind of on the on This trip. But what I like to do is To have a very good friend that Doesn’t live too far from here Far away I leave it And I’ll give him a call. Listen I’m alone tonight. You have time And you’ll swing by. Bring a bowl of champagne And then we kind of set the caviar And then we move on to Two Toula whiskey And cigar. Here we go. Exactly. Exactly. So if you have something like 125
gram 10 and you don’t finish it can you
put that back In the refrigerator. You can. Don’t leave it in The tin for more than 48 Hours. You. I mean if I enjoy caviar
tonight And have a little bit remaining But leave the clothes in The refrigerator And the next morning try To do the caviar I think you have are in the morning Is absolutely amazing. Absolutely I mean I guess that’s
because this Is vacuum seal so the moment you
break the

Vacuum then that’s whenever The countdown really starts start
quickly you Should consider. Exactly. Exactly. Once the seal is broken 24 40 hours to consume your caviar Before that’s once You receive it you have eight weeks. OK. One of the questions Or one of the comments that we’ve
seen quite frequently Is that you know expressing The general sentiment you know oh You know I could never afford
caviar. I mean most people you know
perception Of caviar is you know incredibly Expensive. What are your thoughts on that And you know I mean you’ve got a lot
of people that Are probably interested But afraid that it’s going to break
the Bank. You’re right. Good caviar where it can be pretty Scary at first But caviar doesn’t have To break to break the can if You know if that’s what you’re
looking for But it doesn’t have to I mean you
can be Fairly reasonable And have a good give you experience For 40 45 Dollar And I’m thinking really good
experience we have

Three different candy in front of
you And really enjoy your caviar for
less Than 50 dollars. Never be afraid to ask a question. There’s nothing you can ask. That’s going to sound dumb Or anything like this. It’s as open as You want. It’s there’s no Question in caviar that’s going To make you look ridiculous Or you know if You want to call us And ask us know how much I should
spend How much. We’re here to help you. You guys really approach customer
service in that Respect that in a similar manner
that We do And we encourage people to call in
that conversation With us and we hope you guys have a

a store. I rethink to give this personal Touch and holding the purse so I
know You know. Yeah. And of course you guys have
the boutique In London. Yes. And don’t start on them. Harris New York New York Los Angeles we have no Klayton do Elex airports And we have a beautiful condo bar In the Bellagio In India out of a boutique You can would be more than happy To welcome you. Have you tried some caviar And really guide you into your
caviar Jordan. So we wanted to show you The difference between a 50 Gram and 30 gram 50 gram can sound fairly Small but it’s actually fairly Big amount of caviar

And the 30 gram is not Also a fairly big amount of caviar. It’s definitely enough to enjoy Either alone or With your loved one and kind of have
a taste For it. Yeah. I mean I liken it to you know Just kind of opening a nice bottle
of wine. I mean you know maybe it’s a special Occasion. You know you’re splurging
a little Bit more than you would otherwise But it’s still you know for You know less than a hundred dollars
you can get In fine caviar And 50 or 30. Oh yeah. GRAHAM sure for sure. I strongly believe that Life is a special moment in time. You know I think in the day Or every minute is a special Moment. And Kim you know he’s one of those Time marker that you Kind of puts a dog into Into into a day Or into a journey And he becomes you know this evening
when we Had to get of yours in the evening
is A special evening that we can get Even if it’s not 500 Grams. Not he doesn’t have to be out to
drown yourself. Exactly. You can be 10 gram.

It’s literally enough And there’s no no Small liquor like a cigar You know days very short very tiny Very big. No it’s not. It’s about your own preference you
know. What do you prefer. You prefer a lot you got great if
you prefer A smaller cigar. Yeah absolutely. But you know just the mere occasion Of enjoying a cigar makes it Special. Exactly. Exactly. So our next question is that are There different grades of caviar. There is a lot of different grades
of caviar. Doo doo doo doo degrades kind of Dictates how strong How violins your caviar is Going to be. OK. What about that. You know you’ve got your grades that
exist Within each species right Here. What would you call it species
species. Talk to me a little bit about you
know Kind of going broad you know With Sturgeon you know the Different species And are those different Quality grades. Also like is a Cetra

Higher quality grade than an Kaluga Hybrid or it’s Actually a question that we get
quite a bit Species. It has nothing to do With quality. Doo doo doo doo doo doo speeches You choose because of your Facebook. What’s your favorite Flavor profile Yeah texture a little bit too. But the trouble is real And nerdier than the bacon Bacon will always be a little more
balanced Than drinky And you always plays on each other. What if you’re a first time Buyer come to the booty colas And will guide you through this Process. It can be a little confusing at
first But it’s it’s fairly easy To go around And if you were to just send a tent
of caviar To someone that you knew nothing About their preferences. It was the first time they were
going to experience Caviar. You know what would you send them
like if it wasn’t. You know forget the grains right. So then notwithstanding which At which species which you. Well then that would do what I did To my son.

My son loves caviar And the first time the trunk of the
car was With the Bicol because It’s a nice mixture. It’s a beautiful cuts. The price is fairly reasonable And the flavor profile is
unbelievable. I would go first with this type of Caviar And then you know I Would go on maybe A drinky kind of grew into Its but definity store And buy bacon Or during the that’s when I would
start With them Thank you when my son tried For the first time it was absolutely Unbelievable. His old face. You know it was great. I think that was that just did. I sang expression also. OK so our next question is What is the difference between The caviar grains so the grades Are here to guide Our customers. For some some Focal point that they would prefer Into a caviar for Example doo doo doo doo doo Royalle And you are going to be Brined Nuti. But on the stronger side

Do you and the more you grow up in
grade The more balanced your Guelke Have you always going to be. It’s really about your own
preference I mean some of my clients Prefer doo doo doo doo doo doo
Royal. Even if they could afford special Reserve they could afford any other
caviar They actually prefer the Royal And that’s what they want that’s
what they buy And that’s what we give them And some percentage. They knew they were there. Yeah. Once every five years But the special reserve And really you know go all Out and spend a little more on it. But that’s the one they want. Actually there is a very interesting Couple that there has been the
cultural mind For the past 15 years. They come every four Or five years that they get 50 Gram a special reserve. Cetera And they call me like oh it’s time. And so I hand selected for them In all. And it’s very interesting
Yayoi. I often told them you for one Thing have special reserve you could
get three Or four of royal. But that’s what they want. That’s what they prefer so the only
way they save. And that’s when they get their
special

Occasion. Exactly. Like. Yeah. Yeah. Is there anything at Caviar should not be served with. Definitely. You don’t want to give you With anything that’s going to
overpower The flavour. So no lemon no capers No onions no Nothing that’s going to hide Or overpower the flavour Or the caviar you spent Good money on on the tin of caviar. You feel you want to see What’s inside. And you should never use silver To serve caviar caviar hates Anything that’s silver And you can use anything else Plastic bow And metal anything you want No silver no silver silver Plate or solid no Sterling Interest. What about you know if I was You know I mean I prefer my caviar With a kind of savory dishes. You know that are a little bit more
filling. But if I was doing it a small dinner You know when would I. How would caviar be sequenced And that is it you know could you
serve At the end. You know like your salad
course

With your cheeses Or would you serve it In the beginning. I mean the way they’re going Is very personal it’s very it’s my Own preference. What I prefer would be To serve caviar the First dish of the evening Should be caviar in my opinion Because you don’t want to overpower The caviar with anything else
before. So I would say don’t buy the caviar
on And let the caveat go around the
table And then maybe serve a little bit of
smoked Salmon maybe a little bit of Grom Maybe a little bit of to kind of
complement This. This is this appetizer And then go on to go Home to a meal And it doesn’t mean that the meal
has New kind of the Afghan meat Or any of you know a lot of our
customers With new stay the whole evening
around And have a fish With a little bit of oil on it Or have it would be nice. One of my good customers makes Delicious mashed potato. And he tops up she’s Much better with caviar. And it sounds a little bizarre But it’s absolutely amazing Amazing. And when you mix ending.

I know he would. So is he. Yes. He’s on recipe. So he does a half But they do a little Bit of cream fresh. And so basically it’s Half fresh hot potato And he will put a big dollop of Caviar on top of it. So the mash just like this Very beautiful white And this beautiful black caviar on
top. It’s a gorgeous dish gorgeous. And it’s licious. What a great presentation. So if someone was looking to you Know you know maybe Begin approaching caviar But they didn’t have the budget Maybe save for the Sturgeon which is you know
traditional Caviar. Are there any other fish bags Or kind of you know cousins of the
caviar Family that you know someone could
play with. Of course. Well first there’s the Fish that’s a constant Shuttle fish that’s a cousin To the two the sturgeon. But there’s also a very Great product that is Not as known as the caviar. The sun will grow in the trunk grow

There and valuable product. They have these beautiful Orange color. The flavor is absolutely amazing. One of my favorite Thwaite to them
is Just too cool To do a beautiful lunch around. It’s you buy one of those big
limits. Drop it with creme fresh And dump a whole 50 Gram of some mineral on it And I like that. It’s absolutely amazing. And this one rule are fairly Reasonable in price 50 gram Of Sumeru I think is around eight Or nine dollars. So fairly reasonable in price And absolutely delicious absolutely Delicious. just Leave us with caviar. I think the main thing to Understand with caviar it’s you Can’t go wrong with it. You know you know as long as you’re Full of what you love you can’t go Wrong if you don’t want to spend Too much. Get some And Rothrock rule Or you know it cheap Or caviar.

If you won’t spend a fortune you can Do. But you don’t have To. And you know except Eating your caviar silver. You can’t release you know It’s very easy to to enjoy And if you don’t enjoy it give us a
call And know we’ll be happy too Happy to help you. Yeah I mean one of the things that
you know I Guess has been my experience is that You know especially with such a high
quality caviars The Patros and caviar. I mean really he did it alone With that you know with a plastic
spoon And some champagne And some nice music. And that’s all you need is what you
need. And you know almost you almost don’t Want to overcomplicate that I mean
the You know the crim Frasch you know
the Chives the capers The lemon. I mean for one it’s a lot of work to
chop All that stuff. But second if you’ve got great
caviar Then you don’t need it. It’s a lot of work you don’t need
it. It actually takes away from the
experience I think good care of your Is is the low End product. Q You open it enjoy it Drink your champagne And you don’t great Abel
