How To Serve Caviar | With Petrossian Caviar

Hi, I’m Kirby Allison and I’m here with
Alex Petrossian of Petrossian Caviar. As I was saying thank you for
joining us. – My pleasure So this is our series on how to enjoy
caviar and so we spoke about how to open A tin of caviar in part one and now in
part two we’re gonna speak about how to Serve caviar so Alex talk to me a little
bit about the proper way to serve caviar So either you can serve it on the plate
just like we have now it’s just a plate That you put the tin inside you can do
it on the dinner plate you can do it on A different type of présentoirs we have
a sphere présentoir that’s black very Nice with with the caviar but you for
your first couple of times you may need To invest in any type of carrier serving
pcs or anything like this just you know A good old regular plate is perfect just
really the tin yeah you know in and of Itself you can lay down and if you want
to do a little fancier you can do crushed Ice on the serving bowl in put the caviar
in the middle what we don’t recommend is For you to manipulate the caviar so
don’t you know put the caviar in another Container or anything because
you run the risk to crushing the Eggs and breaking the eggs which you
definitely don’t want to do okay so I Mean there’s some of the spherical
caviar things that’s it so are those Appropriate use they are but you need to
come to us and we’ll you know show you How to manipulate your caviar so
you would safely and you don’t crush all The eggs before you actually put in your
mouth okay and and otherwise if if you Don’t have time to go through that
training you can I would leave it in the Tin it’s just safer okay and what about
the temperature is there a proper Temperature that caviar should be served
at well what I like its to take the Caviar out of the fridge the coldest part
of your fridge serve it right away And as the party goes the caviar will
get to room temperature and you have Different type of experiments back in
the days they used to serve it over ice Because the the dinner would go on
forever And the tin will have to stay on the
table for couple hours This type of tin they’d gone within the
next 30 minutes so you know you don’t Need anything too fancy it’s I
think you know caviar is a is better Better better enjoy the simplest way
possible and I guess just like wine you Know kind of as wine opens up you know
as caviar you kind of warms you have That evolution of flavor you start
picking up on your notes Don’t let it don’t let it stand too long
because then the caviar can switch on

You because it’s very sensitive to
temperature but you know within you 30 Minutes you’re fine no problem and then
how important are the mother-of-pearl Spoons mother-of-pearl is somewhat
important what you should never do is do A silver with your caviar and the silver
will react with the caviar and give a Change completely the flavor you
definitely don’t want that But anything else is fine, stainless steel,
bone, mother-of-pearl you know anything Even plastic works yeah you know in a
pinch you can even use your Hanger Project Collar Stays. – Yeah exactly that you
know and in a pinch you can use Definitely see this mother-of-pearl
spoon or you know fairly reasonable in Price
there is different different type white And blue just white and you know they
range in price between ten to fifteen Dollars so they’re not overly expensive
and I do recommend for you to get them Because it has a very nice mouth feel it’s
very soft it’s it’s it’s it’s beautiful Yeah so anything else that you know that
someone should keep in mind whenever it Comes to serving caviar I mean then
let’s talk a bit a little bit of what You can serve with your caviar so you
can serve either champagne like we’re Doing we’re going to do in the minute
you can use vodka and you can use very Crisp white wine but you know my
personal preference is vodka or champagne You do want to choose a champagne that’s very dry very brute But otherwise it’s it’s very easy
to to find a good champagne on our Website you have a list of champagne
that goes well with different type of Camera you can use that that to to guide
you otherwise you know the same thing You have in your refrigerator and so the
idea behind the champagne is that again Because the caviar is so rich it’s
helping to cleanse that palate right Correct it kind of helps the champagne
the bubbles the alcohol in general Can helps cut the caviar out of your Clean palate so you can enjoy
each bite as it was the first time okay And then you know we were speaking a
little bit earlier that you know again Caviar can really be enjoyed as you know
by itself as part of an evening in and Of itself but also you know if you were
serving this with dinner would it be More of like an appetizer it would
definitely be good yeah kind of a Appetizer all of the oboz are perfect I
think you know caviar as a table center Right in center of your table works very
well and you know everybody can begin to It serve them on the own paste and it’s
it’s it’s actually a lot simpler to to

To enjoy them people imagine you it’s
just you know fish roe at the end of the Day you know with a little bit of salt
that’s that’s all it is then you know It’s of course well pricey but you know the concept of caviar Is very simple just fish foe so for size
reference you know we have a hundred and Twenty-five grand tin which I feel like
is most commonly what people see at Restaurants or at a boutique as a
hundred and twenty-five and then right Here you have 250 and then you know just
for size reference you know here is 50 Grams you know kind of you know right
next to those right here so you know 50 Grams is really a generous serving for
two people a hundred and twenty-five Perfect four for four and the 250 is for
large parties or Center to put In the center of your table something
like this but actually the 250 is our More sold size okay 125 and then the 50 okay Yeah and so some of that’s buying 250
grams I mean that’s probably for you Know dinner party of 8 yeah I mean
with the generous you know kind of Allocation for each person
yeah definitely you know if you want to Have it the whole evening around caviar
and you’re a party of 6 or 8 I Definitely 250g goes very
well very well and you know in my Opinion the more caviar the better
because you know the next day when when You’re alone in your in your in your
kitchen after the day after the Party you know it’s great to have caviar
on some scrambled eggs or on some on Some toast point with cream cheese or
you know it’s in the morning is one of The best things a reward for hosting
well done exactly and you guys actually Have an incredible selection of kind of
