young pastry chef for the first time. Far from La Chèvre d´Or, a two-star restaurant
on the Côte d´Azur, where he usually officiates, He meets us in a beautiful branch of Maison Dior,
in the heart of Galeries Lafayette. Here, everything is in place
to discover Vanilla Diorama, An essence of the ultra chic Private Collection by
Christian Dior. An Ode to Madagascar Vanilla … At a time when perfumes blend with tastes,
what better than to respond to the sweetness Of Vanilla Diorama with a
matching and eponymous dessert… And it is all the magic of a marriage
between flavors and scents that is born From the collaboration between Julien Dugourd and
François Demachy, Master perfumer of Maison Dior… This story stems from a mystery: Vanilla
Diorama pays homage to Diorama Gourmand, One of Christian Dior’s favorite desserts.
Created for him by the famous restaurant Maxim’s, No image or exhaustive description
of this pastry has survived … Julien Dugourd did not need any more to
embark on this astonishing adventure: Creating a small cake in
tribute to Christian Dior … There have been 5 months of research
and development around this little cake. I have already tried to learn about life as
much as possible from Monsieur Dior and in fact, To pay tribute to him, it is true that we have a
round shape for the 1950s, because in the 50s the Entremet was round. We find the velvet side
of the cake, because Mr. Dior evokes a lot, In his works or in the reports that I have seen,
his childhood home in Granville, where he evokes The powdery side of the walls of his childhood
home and he explains that a large part of his own Architecture was built and founded in relation
to this house, so for me, it was necessary to Offer a part of Mr. Dior’s house in Granville
through this small cake. So, we find a little Of the powdery side on the small cake, which is
like a parallel to the walls. And then, above… The curvatures that you can see above, these
are the real pencil strokes of Mr. Dior, from His first sketches in 1947, which were modeled.
In fact, I chose the curves that marked me, touched me We modeled them in 3D to obtain a signature.
In fact, to have the soul of Monsieur Dior, I didn’t want to stamp the “CD” initials or
something like that. I really wanted to go Further to pay tribute to him as best we could.
For me, that was the best solution, that was it, Really going back to his sketches and it gave a
natural draped appearance that represents a bit Of the couture side. And there you go. I thought
it was the best tribute we could pay him … While vanilla is one of the most expensive
and precious ingredients in perfumery, It is the same for pastry. In the cake as in the perfume, vanilla blends
with orange for even more contrast. At the heart of the fragrance, this bourbon vanilla from
Madagascar is embellished with accents of rum,
Patchouli and a note of cocoa, with a quick
spray of white chocolate and in the background There’s a crunch to the dessert, inspired by
this little cake that Christian Dior loved. When he spoke of his dresses, Monsieur Dior
evoked the simplicity at a visual level, But the complexity was inside. Mr. Dior’s first dresses consisted
of 6 to 7 layers, there were weights, There were springs in some
places. It marked me and in fact, I absolutely wanted to do the
same thing with this little cake. So aesthetically simple. Simply elegant. A very
simple but very elegant visual. On the other hand, The architecture of the cake is very complicated
with several layers. We find a cookie, We find a crisp, we find orange marmalade, orange
confit, fresh orange segments, a vanilla mousse, So the complexity of the small cake is inside and
the particularity is that there is no added sugar. There you go, it’s a very light little cake
where we keep the sweetness of this little cake Compared to white chocolate and compared to
orange. But there is no added sugar. We also tried to really respect this light and feminine
side, which we find in the house of Mr. Dior. I’m not afraid to say it’s the creation of my
life, yeah, it’s the creation of my life. I made a lot of beautiful things, I had the
